Maestro mezcalero Alberto Martinez and his son-in-law Reynaldo employ the "capón" technique for this exceptional Espadín. After the agave plants have sprouted, they remove the stalks (quiotes) and allow the plants to remain in the ground for nearly a year, enhancing the agaves' sugar concentration. The resulting spirit opens with clean mineral aromas and a lively whiff of red candies. On the palate, bright red fruit and hints of pink peppercorns linger onto an intense, lengthy finish.
