As the craft cocktail renaissance spread to restaurants and bars across America, it quickly became the expectation that every establishment worth a damn would have its own list of signature, creative cocktails. There’s no doubt that this emphasis on creativity and innovation helped expand the horizons of both the industry and the drinking public, but perhaps we’ve gone too far? While innovation and experimentation might make sense for a select few bars with deep pockets, and a truly creative team, might it not be better for most bars to refocus on established classics instead of attempting to push the boundaries in an industry that’s been doing exactly that for over a decade?
